Tomato Powder

In September I canned about a zillion tomatoes.  I did stewed tomatoes, tomato sauce and tomato soup.  I used tomatoes that I purchased from road side stands, some from my garden and some from friends and neighbors, I never turn down free produce!  Once I was done canning I still had tomatoes in my garden and a few from my Mom’s garden.  So instead of canning little batches I decided to dry them.  I also pick all the green tomatoes off my vines the first part of October when we had our first hard freeze and as they have been slowly ripening I have been drying those too.

Drying tomatoes is a simple process.  I just washed them and cut them in half.  My tomatoes were Roma’s a nice meaty paste tomato, meaning there isn’t a lot of water, perfect for drying.  If you are using bigger slicing type tomatoes, then you would need to cut them into 1 inch slices, you can also dry cherry tomatoes, just poke a hole in them, so the water can escape and they can be dried whole.


It took about 2 days to dry the tomatoes crispy.  In order to grind them into a powder (which was my goal) they need to be good and crisp.  If you plan on keeping them in oil, they don’t have to be crispy, just nice and rubbery.

I dried over 100 pounds of tomatoes, and they all fit in two gallon jars and a couple of pickle jars.


I then ground up the dried tomatoes in my blender, nice and fine to create a powder.  They compacted down quite a bit in powder form, wonderful if you don’t have a lot of storage space and want to preserve food.

I left a few whole tomatoes, to add to soups and stews throughout the winter.

Here is the finished product.

I am figuring (I am not an expert so this is just my own thoughts) that if oxygen packs were added to the jar, this powder would store for several years.

Now, how does one use this powder?

Well, here you go:

To one cup powdered tomatoes, add the following….

Tomato Paste:
1 3/4 cup water and 1/2 tsp sugar

Tomato Juice:

3-5 cups water or to desired thickness.  Salt and Pepper to taste

Tomato Sauce:

3 cups water and 1/2 tsp sugar

Tomato Soup:

3/4 cup water, 1/2 cup milk.  Season to taste.

The Bench

He must love me lots…..
To go along with all my hair brain schemes.
I wanted to learn how to use all of Dadzoo’s power tools and make all sorts of wonderful furniture.
We started with a very simple bench.
I cut out all the wood,
I used a power tool.
And that,
was where I quit.
When all the measuring and fitting and such and putting together started happening.
I, not wanting to bruise his male ego,
graciously stepped down.
(whew!)
Between you and me
I was glad to let him just do it.
From now on, I will let him do the building
and I will do the finishing.

It Has Been Far Too Long

My last blog post was on September 29th.  I can’t believe that I haven’t posted in that long!  There were many reasons why I decided to put my blog away for a little while, although I didn’t intend on doing so for 6 weeks.  The last six weeks have been a time of great reflection for me, and honestly hasn’t left much brain power for blogging.  I have thought about blogging my thoughts as I have sat quietly and studied, listened and learned, but it is all far to personal and precious for me to share at this point.  Maybe sometime later. 
I also wondered if anyone was really reading my blog anymore, and I am embarrassed to admit, I did a lot of my writing for the feed back I geo.  I love the pats on the back, who doesn’t, but that shouldn’t be my reason for writing.  When I started this blog I wanted to share my love of homemaking, but it turned into something I was doing just for the praise that others were giving me.  So with that said, I am happy to be back.  I want to share with you all what I have been doing in my kitchen.  My blog might have sat idle, but I have not!  I hope that you all will keep commenting, but I am going to focus less on what other are giving me and more on what I can give others.

To Be Three

I enjoy my age
I don’t feel a real need to hide my age.
In many ways my thirties have been really, really good to me and I am not ashamed, nor do I look back and wish I could have a do-over.
Except
When I see things like this:
An afternoon nap in my underwear sounds really good right now….and look closely at what is on the bed next to his little elbow.

Oh yeah!
A nap started off by chocolate.
Somedays I wish I could be three.
(little punk found my chocolate stash again, I swear he has a nose for the stuff!)

How to Core a Pear

It sees kind of funny to me, that in all the canning I do I have never worked with pears before.  Since I have never canned pears, or watched someone can pears I had to learn how to peel and core a pear.  It was really very simple and I will just let my pictures speak a thousand words for me.
