THAT kind of family…..

with THAT kind of car.
Yesterday we found and purchased our (ahem) dream car.
It. Is. HUGE.

It seats 12….yes TWELVE people.

I have to admit my pride is hurting a bit.  I am not a “car” person, I usually don’t care what kind of car I drive, how old it is or the general condition, but this one, has me feeling a bit…shy.

I am going to have to get over that.

When one chooses to have a large family, you limit other choices, such as, the kind of car you can drive.

Other than feeling like I am sticking out like a sore thumb while tooling around town, I am very happy with the purchase.  It is only a year old, low miles, great interior with nice extras and priced just right. 

We have been blessed.
On a side note, I have noticed that having 6 kids bumps a person (at least around here) into the weird category.  Why do people feel like they need to comment on my mental state, my sex life, and our (apparent lack of) education on birth control, just because we are choosing to have a large family? 
 My mental state is very healthy, yes, I know how babies are made (obviously, we have successfully made 6), and I am well aware of my birth control options, thank you very much!

Chicken Nuggets…..Method or Madness?

I was asked to share my recipe and method for making chicken nuggets.

I have a confession to make,
I am a “fly by the seat of my pants” chicken nugget maker.

I don’t have a formal recipe and my method has just been made up over the years.

I use three basic ingredients:

Chicken Breast
(or tenders, depending on the price)
Bread Crumbs
(seasoned if you like, I just add some salt and pepper)
Eggs

Method:

If I am using chicken breasts, I cut those up to my desired size.  Then I crack a few eggs into a ziplock bag (gallon size) and moosh it up so the egg yolks are broken up and mixed a bit.  Then I add the chicken, seal the bag and shake it up so the chicken is coated.   Then transfer the chicken into another ziplock bag that has bread crumbs added to it, seal and shake.  I then lay the chicken on a cookie sheet and bake at 350 degrees until cooked.

If freezing, wait to bag the chicken until it has completely cooled, I usually put in on a plate in the refrigerator to quicken the process.  When you are ready to eat, just warm it up and enjoy.

Very simple, and much better than the processed chicken parts you buy at the store.

Preping For the Known and Unknown

This summer I had planned on doing a lot of cooking with my girls, to store up freezer meals for when the baby came.  Then I found out about my partial placenta previa and as the doctor was telling me about the wide range of possibilities, from my placenta moving higher and being no problem, to hospital bed rest and a possible premature birth, I realized that I was very unprepared.  Since then I have felt a huge urge to clean closets, cook, and prepare the baby’s room, most of those things I can’t do.

However, I can cook, as long as I am not lifting heavy pots or do canning, I can pretty much cook anything.  For the last two weeks I have been trying to make meals that can easily be doubled and frozen.  So far I have Chicken Cordon Blu, Sloppy Joes, Taco Meat, Shredded BBQ Chicken, Chicken Fingers and Cooked Chicken Breast (to throw in a salad) all tucked away in my deep freezer.  I am feeling pretty good about my prep work, at this rate, if everything goes well and I am not put on strict bed rest (which I am fairly confident I won’t be) I will not have to cook a single meal for the month of August….how cool is that!

Now if I could only figure out a way to pre-wash laundry……
