Katie’s Sweet Corn Bread

I have never really been a fan of corn bread. Growing up I didn’t get what the big deal was about cornbread. It was ok, but not wonderful.

Until I met this Corn Bread

and I feel deeply, deeply in love.

I got this recipe from my good friend Katie, she has a blog, but it is private. So I am taking it upon myself to share this wonderful recipe (I hope it isn’t a family secret…).

It is seriously the best stuff, it will change your life, make your kids behave and your husband pick up his socks.

Yes, it is that good!

Here is our cast of characters:

1 cup cornmeal
2 cup flour
1 Tbsp baking powder
1/2 tsp salt
1 1/2 cup sugar
3/4 cup melted butter
4 eggs
1 cup milk
1 tsp vanilla


Mix all the dry ingredients, and give them a stir in the bowl.


Melt the butter and mix it with the wet ingredients.
Whisk it well.

Pour the wet into the dry


and stir it well

Pour it into a greased 9×13 pan

Bake at 350 degrees for 30 to 40 minutes.

Check for doness (is that a word?) by sticking it with a fork or toothpick, it will come out clean if it is fully cooked.

Serve hot with butter and honey….good enough to be a dessert.


If I am feeling particularly frugal I will freeze half of it. It freezes really well.

You can also make muffins, this batter will make 24 muffins. I keep them in the freezer and put them in lunches or use them for after school snacks.

  4. I’m so glad you shared the recipe!! One of my favorite ways to eat it is with that homemade apple butter. Talk about dessert! Also, I like to make it with fresh cornmeal. You just put plain popping corn (you know, the air pop kind) through your wheat grinder to make your own fresh cornmeal. With fresh cornmeal, this stuff tastes sort of like caramel corn. Mmmmmm….

  5. I haven’t had corn bread in YEARS! I just might need to make my family some. Especially if it will make my kids behave and my husband pick up his socks. Can’t bypass that opportunity 🙂

  6. I was beginning to think maybe my cooking skills were really a lack of putting in enough vaniila. 1 tsp sounds more reasonable (although if you hadn’t corrected it I would have really added a cup- I’m a directions follower).

  7. Katie’s recipes are the BEST. I didn’t like corn bread as a kid either.

    When you make it with real cornmeal, do you use all cornmeal? Or do you do half corn meal, half flour? We tried to make something with straight cornmeal and it was REALLY dense. But it wasn’t this recipe.

  8. I love corn bread! Love it! I just tried a new recipe two nights ago that turned out very interesting. It had a crispy top! It did not taste bad but I don’t know if I’ll make it again.
